A fairly unusually styled sake, in terms of not only the rice that it's made from, but also how it's made. It's made from red rice that is completely unpolished. The results are off-dry, refreshing and fruit driven, with a tiny hint of effervescence.  \u003c\/p\u003e\n\u003cp\u003eWonderful as an aperitif, served with fresh fruit, or after dinner with chocolate.\u003c\/p\u003e\n\u003cp\u003eThe rice is grown pesticide free. The brewery prides its rice farming on the presence of ducks in the paddies. Maintaining a bio-diverse rice field attracts the ducks, who not only naturally take care of pests, but also introduce oxygen into the paddy as they stalk the mud for their food. The oxygen, in turn, helps the rice grow. \u003c\/p\u003e\n\u003cp\u003eAside from their innovative ways with rice, Amabuki is also a pioneer in their exclusive use of flower-yeast in their brewing. Flower yeast doesn't actually impart flavors of flowers, it's just where it comes from. What they do do, is add structure and complexity. I'm sure I'll write more about flower yeast in the blog later, but here's a short run down about the topic: The vast majority of sake yeast being used comes from a collection of specially developed yeast strains bred specifically for sake brewing. Not too long ago, a university professor in Tokyo started experimenting with cultivating naturally occurring yeasts from flowers and using them to brew sake. The results were intriguing and clearly opened up new doors to new sake expressions. Rhythm of Centuries is made with with an Old-school brewing technique called Kimoto, which involves constant, rhythmic, labor-intensive mixing of rice mash with wooden poles. Literally, for every sake brewer producing Kimoto-style, it's a centuries-old music that gets played into their sake.\u003c\/p\u003e\n\u003cp\u003eFurthermore, Rhythm of the Centuries is aged for up to four years in bottle. \u003cstrong\u003eSometimes a cloudy sediment can occur in sakes which are bottle-aged. This is totally natural, and if anything, is an indication of the heightened depth and umami.\u003c\/strong\u003e The brewer, Miho-san, debates with herself whether or not she should switch to tank-aging in order to prevent this sediment. Personally I think it’s cool and interesting and am glad that she chooses bottle-aging.\u003c\/p\u003e\n\u003cp\u003eRhythm of Centuries has wonderful, bright acidity, deep umami, and a dry, medium body.\u003c\/p\u003e\n\u003cp\u003eThe makers of Yuho like to experiment, and aren't afraid of being a little strange in their quest to make truly unique and delicious sake. Yuho's brewmaster Miho Fujita says that she brews the sake that she enjoys drinking.\u003c\/p\u003e\n\u003cp\u003eThe Japanese characters on the bottle mean \"Happy Rice\" but the name Yuho also refers to \"UFO\" (say it out loud), which have been often sighted in their remote, rural area.\u003c\/p\u003e\n\u003cp\u003eMiho-san believes her sake can stay open longer than most and recommends actually waiting to drink them after they've been open for 1-2 months! \u003c\/p\u003e\n\u003cp\u003eRhythm of Centuries is made with Notohikari rice that has been milled to 55%.  Drink it warmed or chilled. It goes great with heartier dishes like steaks and stews. Then an intriguing note of toasted grains and a little umami join in to add some bass to the treble. We've seen Takehara have a broad appeal across many different drinkers (and non-drinkers) of sake alike. I feel like it's a lot to do with the tight balance of wide ranging friendly flavors, while remaining inexpensive despite readily apparent high quality.\u003c\/p\u003e\n\u003cp\u003eA cool thing here too, is that what “Takehara” refers to is the type of rice that this is made from. Takehara is a table rice indigenous to Hiroshima, where Seikyo is from. Plainly, table rice is the rice you eat. Sake, by and large for the past 150 years has been made from a type of rice that is specific for sake; it specifically makes for really great brewing but isn't common for eating. So it’s quite a stunt that Seikyo chose to flex their brewing prowess on a type of rice that the rest of the sake world has long since moved on from. It’s even more so a stunt that they stuck the landing perfectly on this one. Sake of this quality level, at this price point is a rare thing, but a rarity that we hunt after diligently.\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003eTakehara does well at all temperatures. Chilled is my favorite though. It's also quite versatile at pairing. In general, I'd stick to lighter dishes. It's great with seafoods, sushi, sashimi, and crab alike. Hiroshima, where Seikyo comes from, is an ocean city, so this makes sense. It's great with salads, grilled veggies, and mushroom stir-fry. The quality and care are evident in their sake. \u003c\/p\u003e\n\u003cp\u003eIzumo Fuji drinks smooth and dry, with a lively fresh palate that expresses notes of toasted rice and tropical fruit in equal measure. Tasting notes of salted grilled pineapple breezy alongside oceanic minerality make this sake one of my absolute favorites. Izumo Fuji's Ancient Shrine punches well above its weight for sake of this price. \u003c\/p\u003e\n\u003cp\u003eAncient Shrine pairs well with big spicy flavors like Mexican and Indian cuisines, just as much as it goes well with subtler things like lightly seasoned grilled vegetables. Then the Kobe earthquake of 1990 hit, and sadly, they lost nearly all. The thing is, Daikoku Masamune, although a small family run brewery, led an amazing cult following in their area. This cult following extended even into the leadership ranks of big-brewery Hakutsuru. So when Hakutsuru's president learned of Daikoku Masamune's loss, he offered up space in Hakutsuru's Hyogo plant for them to continue their sake prodction. Daikoku Masamune took them up on it, but rather than use the (very very good) water that Hakutsuru uses, they instead opt to tank in their own water from the original source near their old brewery.\u003c\/p\u003e\n\u003cp\u003eDaikoku Masamune's Junmai Ginjo is crisp, full bodied, with a hearty bitterness and pleasing rustic structure. It boasts rich aromas of hazelnut and dark chocolate (Nutella anyone?) along with blackberries, pepper, and rice husks. On the palate, you get lighter flavors that wittily defy the established presence of the nose. First, the springwater-like texture so typical to many Niigata sakes hits the mouth. Then follows a light astringency and acidity. The texture is dry, crisp, and linear.
