Taiyaki is a Japanese confection of sweet cakes baked into a mold shaped like a sea bream fish ('Tai' in Japanese) and filled with red bean paste (or custard, chocolate, or other fillings).
Japas Taiyaki Imperial Stout is brewed with Japanese sweet red bean paste, vanilla, and lactose. It is a wonderful balance of bitter hops, creamy texture, and sweet and bitter interplay. It is deep and complex while still remaining fun and intriguing.
On the nose, you're greeted with a cool side-by-side of roasted grain along with the Japanese sweet and earthy red bean paste aromas. Vanilla is there too, working to tie the whole thing together. On the palate is a heady melange of flavors such as molasses, baking spices, rooibos tea, prune, dark chocolate, sweet potato, pipe tobacco, beans (well, yes, of course), vanilla, and cooked cream. This is one of the coolest and most unique beers I've had all year. I'm typically a one-and-done drinker when it comes to big strong beers like this (10 ABV alert!) but I have to admit that after drinking my first, I (possibly foolishly) went for another because I liked it so much. And I was having it with Girl Scout Samoas Cookies for dessert, so it was hard to pass up.
Japas Cervejaria is run by Maíra Kimura, Yumi Shimada, and Fernanda Ueno, three women who merged their talents into a brewery following their love of beer and their shared Japanese-Brazilian heritage. Their beer is primarily produced in Sao Paolo, Brazil, however this particular one was brewed in Chicago.
Taiyaki Imperial Stout pairs well with roasted meats and vegetables, pork tacos, BBQ, and baked mac and cheese. It's also a great pair with desserts such as vanilla ice cream, chocolate cake, or cookies.
10% ABV! 60 IBU.
