'Sawā' simply means 'sour' in Japanese. This sour beer is brewed with peaches and bears a refreshing tartness that is typical of Berliner Weiss ales. The color is a wonderful golden-orange that deftly matches the warm hue of the label. (Kudos to Japas' graphic designer/co-owner Yumi Shimada for nailing this detail.)
The foam is white, light, and compact and the ale's aroma captures the fresh, ripe peaches added in brewing, along with pleasant notes of citrus and yeast. On the palate, Sawa drinks with a sessionable balance. The refreshing acidity is backed up by a medium-light body, with only enough sweetness to even the sour.
Japas Cervejaria is run by Maíra Kimura, Yumi Shimada, and Fernanda Ueno, three women who merged their talents into a brewery following their love of beer and their shared Japanese-Brazilian heritage. Their beer is primarily produced in Sao Paolo, Brazil, however this particular one was brewed in Chicago.
Sāwa Peach pairs well with grilled meats, burgers, fries, and yakitori.
