This is a concentrated dashi soup base for making udon and soba. Chilled Soba noodles dipped in tsuyu broth is one of our favorite summer dishes. Tsuyu broth is basically a savory dashi/soy broth that is a common base for udon and soba soups, as well as agedashi tofu.
Mix one part broth with 2-3 parts cold water for dipping tsuyu, or 6-7 parts water for soup broth. Also known as Mentsuyu.
