Not only are the chilly waters of Hokkaido considered to be where the best konbu grows, but the konbu used to season these also come from the best-of-the-best place in Hokkaido for konbu: the tiny island Rishiri, in Japan's extreme north! If you want to be fancy, you call them by their Japanese name, kobashii shoyu okoge senbei.
