Kokuto is a very special "black sugar" that only comes from Japan's southern Okinawan islands. It is one of my favorite flavors in confections (along with kinako). Kokuto is excellent in desserts, pastries, yogurt, fruit salads, cocktails, and in stews and sauces. (I also just eat it raw!)
Murakami Kokuto Black Sugar is particularly unique in that it comes from sugar cane grown in the coral soils of Hateruma Island. Hateruma sugar carries a distinctive rich 'terroir' and is considered to grow the best sugar cane of all the Okinawan Islands. Kokuto is different from what you'd think of like brown sugar, where they add molasses to refined white sugar. Instead, Murakami black sugar is cooked from fresh cane juice into a unified single batch, preserving a rich, smoky, caramel nuttiness. The resulting syrup is then hardened and roughly crushed into the chunky Kokuto.
Unlike highly processed sugars, kokuto black sugar is minimally processed and therefore retains the health properties of the cane sugar plant and is high in calcium, potassium, and iron.
