Katsuobushi (bonito flakes) from our very own Forest Grove! Yamaki is a 100+ year old highly esteemed katsuobushi company based in Ehime, Japan, and they recently opened up a facility in Forest Grove, Oregon.
This is skipjack tuna that's been dried, smoked, and then shaved for easy use. This is a fine cut, 'ito-kezuri', and should be used as garnish (not for making dashi). The cut of these bonito flakes will add a cool, almost crunchy texture in addition to imparting that umami-rich bonito flavor.
