Marumoto Brewery made Japan's first sparkling sake! They make two styles: Blue Clouds, and a rose and hibiscus infused-version, Rose Clouds.
Blue Clouds has a creamy texture with delicate bubbles. Aromatically, it shows notes of stone fruits, banana, and rice pudding. On the palate, it has a surprisingly present acidity that gives a refreshing lift-off to flavors such as yogurt and peach. Although this is a sweet sake, the fine acidity wonderfully keeps the balance and provides delicious structural support.
Rose Clouds is the same sake as Blue Clouds but with the addition of rose petals and hibiscus! These ingredients add a tea-like astringency to the texture, along with the fruity notes and added complexity of rose and hibiscus's herbaceous phenolics. Naturally, the color of Rose Clouds is a charming rose pink.
Like Champagne, Marumoto's sparkling sake is bottle fermented to produce its bubbles. This creates wonderful texture and biscuity aromas. Hou Hou Shu is only pasteurized once, in-bottle, to preserve liveliness and nuance in flavor.
Marumoto is a rice-obsessed brewery. The owner/brewmaster grows his own Yamada Nishiki rice, much of it Certified Organic, while also working closely with other farmers in his town to grow other varietals. Their location, Okayama, is known for producing some of the finest sake rice in Japan.
