This hijiki salad is another example of nimono, a simmered dish, like the kabocha. It's a simmered dish that you enjoy room temperature or cold, though. Hijiki is a seaweed that sort of resembles tea leaves. I love it for its chewy texture and its earthy flavor. It doesn't taste too seaweedy, for those of you who don't love that flavor. It contains high levels of iron, magnesium, calcium, and potassium, so there's no excuse not to include it in your diet.
This Hijiki Nimono is made with tofu, edamame, carrots, and lotus root. The lotus root really adds a cool crunch to the dish. You can eat it as a side or eat it over rice or even mix it into rice! I also think it'd be a fun and easy topping for a salad, especially if you dressed it with a wafu (Japanese-style) dressing like the Kewpie savory soy dressing.
Please enjoy this cold or room temperature. You can eat it out of your fridge for days so stock up and enjoy it all the time.
