This is one of the most ubiquitous dishes in Japanese cuisine. I don't know how many times I ate it as a child, but I still crave it to this day.
This is a side of kabocha squash simmered in shoyu and dashi until it's custardy soft. It's so simple, but it really showcases the flavor and texture of kabocha. It's also chock full of vitamins! Sometimes I think, I don't really want any kabocha today, but then I eat one piece and then another, and then the whole dish is empty.
Please enjoy this cold or room temperature. You can heat it up if you want, but please, heat it very gently or else it will melt. You can eat it out of your fridge for days so stock up and enjoy it all the time.
