Esteemed Iio Jozo vinegar brewery makes its purple sweet potato vinegar by first fermenting the potatoes (beni-imo) into sort of potato-sake, using koji and yeast, and then fermenting that bright red potato brew a second time, into this vinegar. It's a painstaking process, but the results yield unmatched results: a lightly earthy sweet potato vinegar of refined fullness and mouthwatering acidity.
A little goes a long way with this vinegar. Pour a splash on sauteed veggies, dressings, meat marinades, soups and stews to brighten up the flavors and make your dishes sing! Or do like my aunt and add a splash to seltzer and enjoy as a Japanese health tonic!
