Naturally gluten-free, this true Tamari is simply the viscous, umami-rich liquid that comes along with traditional miso production. Being a "true" Tamari means that this pure-pressed liquid comes from miso consisting simply of soybeans fermented with koji and the local sea salt. Nothing more. The miso will spend three years(!) aging in cedar barrels before Ito Shoten Tamari is ready to be pressed off. Ito Shoten Tamari is intense, complex, and rich with umami. It is amazing as a condiment for raw fish and grilled meats alike, as well as raw and cooked vegetables.
