Easy drinking, balanced, ricey, Low-polish sake that's sessionable and not flimsy. There's enough fruity green apple character to keep it fun and refreshing, but the slight nutty bitterness and astringency work well to keep it just serious enough. This is a great sake for nutty and smoky cheeses, ramen, grilled pork, and anything with soy sauce.
Joto Junmai shows best chilled or room temp, but I wouldn't pass it up for warming either. 

"The Green One" is made by Eiko Fuji Brewery, in Yamagata prefecture. Yamagata is considered to have some of the best climates in Japan for growing rice, and many varietals of rice are grown and used for sake there that rarely get seen elsewhere in Japan.
