Kasumi Tsuru is a 300 year old brewery located in a small fishing village on the Sea of Japan. They are known for their fresh seasonal crabs, and for their sake. Many breweries make their sake with traditions of local cuisine first in mind, before all other factors. Kasumi Tsuru's Extra Dry Kimoto is exemplary of an "oceanic" style of sake: breezy, crisp, umami-driven and suited to pairing with shellfish.
Like it says in the name, their "Extra Dry" is one of the driest sake that we sell at Fulamingo. These super dry sakes are especially suited for food pairing, and tend to light up in harmony with whatever you serve alongside them.
On the palate, Kasumi Tsuru's Kimoto is earthy and savory, with hints of dried fruit and nuts. There's a toasted sesame and seaweed character that I really love about it as well. The finish is long and layered.
Kasumi Tsuru's Extra Dry Kimoto is particularity well-suited for serving at any temperature. Warmed or chilled alike.
