"Crane of Paradise" is a soft and easy drinking sake with a friendly and citrusy, herbaceousness. There's also a slight hint of effervescence here that I love. The mouthfeel is crisp, dry, and energetic. Balance wise, Kawatsuru drinks with a nice combination of dry, sweet, and umami flavors. Juicy grapefruit, fresh cut grass, and salted pineapple lead the charge across the palate.
To relate to wine drinkers, I love Sauvignon Blanc and feel that other Savvy B. fans might like this as well. Don't expect it to carry the same acidity (that's just the low-acid nature of sake in general), but my fellow Loire stans might feel me on the grassy and energetic nature of this sake.
Notable as well, brewmaster Miki Fujioka is also a mother of two children. Ideally this wouldn't be a talking point, but while female brewmasters are already rare in the world of sake, being a mother who brews sake is practically unheard of in Japan.
Kawatsuru is so good with pizza. It's great with appetizers like prosciutto, or smoked salmon and cream cheese as well. Drink it cold or at room temperature.
