Kawatsuru brewed this limited-run Junmai Ginjo with yeast isolated from olive trees! Not just any olive trees, the Sanuki Olive is native to Shikoku where Kawatsuru has been making sake for the last 120 years.
Both powerful and refreshing. This light, sunny, grassy, and slightly woody, Kawatsuru Olive is a new favorite that we are looking forward to enjoying many bottles of in Summer patio and backyard hangs. We are putting this with pasta salads, bread and olive oil apps (duh.), grilled lamb, lemony and herby chicken, couscous, hummus plate, and mild soft cheeses.
Brewing sake from various yeasts isolated from specific flora such as apples, strawberries, flowers, and even olives, is a whole thing. It's new, non-traditional, experimental, and opening up a wide range of flavor profiles for the sake drinkers to enjoy. Fulamingo is all for it.
