Ginginga, by Kidoizumi Shuzo, is a nice big friendly sake. It's loads of fun and also has brainy heft to it.
Being unpasteurized, on the nose, we get a set of bursting and lively aromas that hit in the way that only a namazake can: marshmallow, banana custard, toffee, cooked cream, grape, ripe watermelon, and a little bit of earthiness as well. On the palate, Ginginga bursts in with the gusto of Kool-Aid man. It's big and rich right away, with sweet notes of horchata, toffee, brown butter ice cream, and ripe plantains. These sweet notes give way to woodier, earthier elements like white mushrooms, toasted coconut, and whole-grain bread. The finish is off-dry, with a good measure of both umami and acidity to keep the whole package in balance.
Kidoizumi Shuzo is known for its unique 'hot Yamahai' brewing method. Yamahai is a technique where lactic acid in the sake is cultivated through open fermentation and allowing ambient lactobacillus bacteria to do their thing. (Think lambic beers.) Kidoizumi has developed their own variation on the Yamahai method where they warm up the starter mash to a considerably hotter degree than any other brewery doing Yamahai. It's their own thing! And their sakes show personality, depth, and distinct umami for their efforts.
