Star-Filled Sky is one of the more unique high-polish sakes that we've encountered. It's rich and quite savory, with notes of mushrooms, soy sauce, and smoked honey. Yet interestingly, these funky notes sit in playful harmony with fruit notes such as apple and melon. Flavors of cooked rice and dried grass tie the fruit and the funk together nicely. It might all sound a little strange, but the complete package just works. This sake is rich and finishes with dry minerality.
Another notable aspect, Mantensei's Star-Filled Sky is aged. The brewery holds onto the sake for three years, letting the flavors find their harmony before releasing it. The rich golden color of this sake is a testament to this aging.
This sake is made from Yamada Nishiki and Tamakasae rice milled to 50%. This sake is brewed with a higher ratio of koji as well, which adds to all the earthy, savory-soy funky notes going on.
Mantensei is in Tottori prefecture, a region considerably rural and well-removed from Japan's bustling metropolises. The name "Star-Filled Sky" refers to their pride in remoteness, living away from city light pollution that would otherwise take away from the cosmic grandeur.

Rescheduling: If you feel you might be late or need to reschedule your pickup, please let us know by 10am of your scheduled date, and we will be happy to set up a new time for you! Otherwise, we ask that you please be on time for your scheduled pickup. For food quality and safety reasons, we may have to dispose of any prepared foods if you are more than two hours late for your pickup and will not be able to offer a refund.
Picking up from Cargo/Colibri: Just show up at your pickup spot with your ID, on your pickup date/time and let them know you are there for your Fulamingo order. Show your ID to a staff member and they will get hand off your pickup to you. Also, while you're at any of our friends' stores, please feel free to shop!
