Rihaku's Wandering Poet is a paragon of classic-style sake making. Rihaku uses top quality Yamada Nishiki rice (polished to 55%) and highly aromatic yeast to create an expressive, elegant, and sophisticated profile that shows off aromas of melon, spiced banana bread, and sea air. On the palate, you get a nice, tart acidity and fine-grained astringency that accompany a mouth-filling, soft texture. This is medium-bodied sake with a dry, lengthy finish.
I like to drink Rihaku's Junmai Ginjo either chilled or at room temperature. It goes great with medium-intensity cheeses like Manchego and Gouda. Its acidity makes it a fantastic companion to fried foods, as well.
Rihaku claims to have changed very little about the way they make sake, over their long history of production. As trends in brewing come and go around them, they stick to their ways and make what they want to. Overall, their house style is all about balance, detailed expression, and straightforward elegance.
