Shichida is one of our favorite sake brands. They center their craft on making sakes which are complex and expressive, while remaining well balanced, and even holding a measure of restraint.
Shichida's Junmai Ginjo comes across clean and fruity on the nose: with melon, apple, grape aromas. It's medium body carries a bold balance of umami and acidity. It is complex with a pleasantly bitter backbone.
Shichida's Junmai Ginjo is made from locally grown Yamada Nishiki and Saga no Hana rice, milled to 55%. Drink it warm or chilled. It is 16% alcohol by volume.
Shichida is a new project from the 150 year old Tenzan brewery, located in Saga.
