Shichida is one of our favorite sake brands. They center their craft on making sakes which are complex and expressive, while remaining well balanced, and even holding a measure of restraint.
Shichida's Yamahai features subtle umami with a long finish. Aromatically, it is soft with a floral and fruity nose. The palate marries flavors of ripe peaches and earthy umami with medium acidity and a medium body. Definitely less funky than is typical for Yamahai style sakes.
Shichida's Yamahai is made from locally grown Yamada Nishiki rice, milled to 55%. Drink it warm, room temp, or chilled. It is 16% alcohol by volume.
Shichida is a new project from the 150 year old Tenzan brewery, located in Saga.
