Shiokawa-san has traveled the world making sake. His travels and experiences collaborating with brewers in the various countries he's visited brought him back to Japan with a strengthened curiosity and sense for how terroir, or "sense of place", might best be expressed in sake brewed at his family's own brewery in Niigata.
In his hunt for expression of terroir, Nopa is made from locally grown rice, which has been minimally polished (90%). And of course there's the pristine, soft, and renowned Niigata spring water. Shiokawa-san brewed Nopa without the use of mechanical temperature controls, instead using his expertise to work with the natural hot and cold cycles within the brewery.
The resulting sake is at once powerful, rich, and elegant. It shows notes of citrus and tropical fruits (in the form of papaya, kumquat, and lemon) as well as tart, custardy yogurt. There's a wonderful savory component too, typically of minimally-polished sake rice, which shows up in the form of smoky black pepper-laden umami. The brewery's Niigata spring water shows through nicely and brings refreshing balance to the vibrant acidity and deeply powerful flavors.
