The rice grown to produce their Shiragiku Nishiki sake was on the verge of extinction. With a mere 55 seeds, Taiten Brewery planted and propagated this rare rice back into growth, year after year, until they could plant it widely enough to specifically brew this sake. Shiragiku Nishiki is both the name of the sake and the rice that makes it.
Shiragiku Nishiki is dry, and full bodied, with vibrant acidity. The sake is nutty, herbaceous, and slightly meaty, with a pleasant backbone of bitterness. Red wine drinkers and IPA fans alike would enjoy the hearty complexity of this sake.
Taiten Shiragiku is in Okayama prefecture, the birthplace and home of number of Japan's special heirloom sake rices. The area boasts a special microclimate that shelters and protects longer-stalked rices that would otherwise be destroyed by the Typhoon winds that tend to stir up right around harvest time.
The Shiragiku Nishiki rice is grown by local farmers and milled to 65%. The sake is 16.5% alcohol.
