We love pickling. Japanese cuisine has such amazing ways of preserving the freshness and flavors of vegetables and fruits into pickled form. Fulamingo aims to bring you a variety of Japanese pickles: some seasonal, some staples.

Shiitake Mushrooms in Ginger-Soy Vinegar
I'm addicted to these I think. They are bright with ginger flavor, full of umami, and tangy from the rice vinegar. They are great as an add-on to ramen and soba noodle soups, or as an easy and healthy side dish to make any meal more magical. *Vegan, gluten-free. Contains soy.
Curried Carrot & Onion Pickles
These tasty pickles are light and bright, with a great crunch. They balancing the natural sweet earthiness of fresh carrots and the acidity of onions, with the deep and rich aromatics of Japanese curry powder (garam masala, cumin, coriander, pepper, ginger, cinnamon, and more). Don't worry if you don't like spicy things, these are very mild. These are a great addition to Japanese curry rice. They also are awesome as a simple side to fish and rice, chicken, pork, and beef dishes. *Vegan, gluten-free, soy-free.
Miso Burdock
The texture of these is perfect and exactly what I expect from a good Japanese pickle: There's a firm snap and give when you bite into them. On top of that, these pickles are just layers of umami built upon each other. All I need is a glass of sake an a pile of these and I'm a happy camper. *Vegan, gluten-free. Contains soy.
Ume Lotus
Lotus root is one of those foods with the coolest texture. It's crunchy but also very soft at the same time, kind of like stepping out into fresh snow. These are pickled with a light ume pickled plum vinegar. The main show is the texture, but you stay for the light, fruity ume. *Vegan, gluten-free, soy-free. Contains stonefruit.
