Bocho Tsuru is a brand new sake, both to Japan and the US, although Yamagata Brewery has been at it for over 130 years. The youth of the sake shows wonderfully in it's addition to the newish sake brewing trend of producing low-polish sakes in a way that shows off characteristics that you'd normally see in high-polish brews. Basically, this means you get the best of both worlds: Low-polish bold structure but with High-polish aromatics and fruit-notes. It's a bullseye mashup. It's got the bold, ricey heartiness of Junmai, but with ripe mango and melon riding along, Ginjo-style.
Yamagata brewery recently made the switch to pesticide and chemical-free rice growing after the brewery president noticed that migratory cranes stopped landing in the brewery's rice field. Needless to say, the cranes are back, along with all the other flourishing that comes from responsible farming. He's also known in the sake industry for establishing the use of refrigerated shipping containers for sake transport. For this, we owe him thanks for giving sake brewers the confidence to ship unpasteurized sake to the US. Without him, us Americans wouldn't have nama.
