Medium bodied, crisp, and nutty. Clean finish and, of course, extra dry. Light and persistent rice umami gives this a TON of leverage as a sake for pairing. For those of you who know about secret cooking ingredients like shio koji, shiro dashi, or yuzu kosho, you can get the picture of how this sake has an outsized effect on making your food pairings taste so much more like themselves.
