Introducing Red Bean Anko Butter spread! This is made with sweet red beans, cooked and pureed until they're soft and silky and mixed with a touch  of butter added in for texture. This is perfect on toast, or as a topping for ice cream, a side for cheese and charcuterie, on crackers for a little snack with tea, or as a filling for baked goods. It's mildly sweet, in that earthy way that Japanese sweets are often sweet. If you know yokan, it reminds me a lot of yokan....like a spreadable yokan. Yum! This is a flavor profile that's not super common in the States, but is a staple in Japan.
