This one is a little less earthy than one would expect from an Old-school starter-mash style like Yamahai. It's got the acidity, but not the usual earthiness. Just a hint of astringency. A sessionable Yamahai, maybe? Overall, it's soft, slightly floral, and has a nice zip of lime and other citrus fruits on the palate.
One cool thing about this particular sake: we got to taste two bottles of it side-by-side, one that was newly opened, and another that had been open for SIX MONTHS. The results? Both were awesome, and frankly, the six-month old displayed some really interesting characteristics. The pleasant astringency tasted in the fresh bottle gave way to a softer, rounder structure, with a little more richness. This just goes to show that you certainly don't need to be in any rush to finish an open bottle.
Fukuchitose is a small, family operated brewery that only produces Yamahai style sake. Why? Simply because the brewery president's son likes to drink Yamahai sake.
