Hakushika's extra-dry no-frills everyday sake is one of my favorites of its class. Just like with its cousin, Hakushika's Junmai Ginjo Carton, our heroic brewers here prove again that delicious, well-made sake can still find a home at 7-11 or Lawson. Hakushika brewery is my favorite for "the cheap stuff". Calling it cheap isn't even right. It's a little insulting to how good this inexpensive stuff can be.
For being an "extra-dry" style, it's not so bracingly dry that it begs food to accompany it, the way that others of this kind can do. Instead, it presents its dryness along with a clean ample body, and a finish so soft that it almost comes across as creamy. The profile of flavors and scents here is mainly focused on the rice-y, grain, and cereal flavors of grass fields in autumn, however, there is a slight bit of fruit such as apple and peach to add some fun to the harvest-party.
Take note for the large bottles: like most sake, you don't need to rush to finish it once it has been opened. Sake can often go a month and often longer after it has been exposed to oxygen. Rest easy, and enjoy. You are more likely to finish the bottle even before it starts losing luster.
