This one is literally aged in a snow cave for 250 days before release.
Koshinohomare is light, round, mineral, and clean. Typical of Niigata sake (where Koshinohomare is made) this bottle shows off the ultra clean and crisp water that goes into the brew. I love Niigata sake for being like boozy mineral water. They may not be flashy, but there is still a lot to get lost in, even in austerity. This one is a swiss-army-knife of food-pairing possibilities. Rich cheeses, wine-braise sauced dishes, miso marinated fish, sashimi, and roast chicken are all on my list for things to eat with this one this year.
Hiyaoroshi are limited, special Fall-released sake which are special lots set aside each spring when brewing wraps up, and aged over the summer. These seasonal sake are pasteurized just once, before aging. These bottlings are specially crafted to go with autumn cuisine, and show a unique balance of fruit, savory, nutty, and have a certain richness to them. They are a great way to warm up to the incoming cold weather!
