Manatsuru is a tiny brewery. They only have three employees. Their Mana 1751 comes from a single tank. It doesn't get more small-batch than this.
"True Vision" is powerful, layered, umami-laden, earthy, peppery, and with a good dose of mushrooms, too. The sake is medium bodied, with rich acidity and finishes dry.
Having this without food is a missed opportunity. It is amazing with fried chicken. Try it with chile verde pork, lamb chops, or tempura shrimp, also. Drink it chilled or at room temperature.
The brewery has been around since 1751, but in 1998 they hit rock star status in Japan, when thanks to their new brewmaster, Izumi-san, they started winning every award around them. Izumi-san is still their brewmaster, and despite the acclaims he's received, he's not actually very competition minded. He's much more interested in producing truly unique sake, and is quoted saying, "It is more important to be the only one than it is to be number one."
