This is an organic, gluten-free tamari made by Yamasa, the oldest shoyu brewery in Japan. It's tamari, so it's a little richer in flavor and more viscous than shoyu.
Which do you prefer between Yamasa and Kikkoman? They're both large companies that are committed to brewing shoyu instead of hydrolyzing it with acid. It's really a choice between two of the oldest and the most globally popular breweries. I'm happy to use either in my daily life but I do have a soft spot for Yamasa since they brew a lot of their shoyu in Salem, OR.
(I'm not super stoked on the packaging, but it's a good product, lol)
