White Walls carries lush rice-y richness, in a real "from the field to the bottle" sort of way. It's remarkable to get a sake of this value that drinks clean, expresses the purity of the water it's brewed with, and shows off the rice milling and brewing skill that go into it. White Wall bears a soft, velvety texture that finishes dry. On the nose, there is subtle fruit of peach, citrus, and pear sitting just below heady notes of steamed rice.
Shirakabe Gura's Tokubetsu Junmai drinks best when warmed up, but chilling it down will play out nicely as well.
