Enoki Mushrooms, preserved with togarashi (Japanese seven spice). Mildly spicy, savory, and with a particular moist, slightly sticky texture that you either know and love about certain Japanese foods (like what we love about Natto and Yamaimo...), or that maybe you are "still getting accustomed to." (If you don't like it yet, no worries, we don't judge!)
Enoki mushrooms are the really thin white ones that come in bunches of like 100. They group together in beautiful swirls whenever they are cooked, and have a very mild, delicate and nutty, savory flavor. Their texture is soft and spongy but with a nice toothy bite through the numerous stems.
I'm currently mostly eating my Enokis the traditional way, as a little side dish with my rice, for Japanese meals, but I've also enjoyed these as a topping on grilled veggies, fish, or, on a picnic with some bread and wine, just like I'd enjoy tinned fish.
