I love this dry, crisp, classic Honjozo-style sake. Brewed with a little bit of brewer's alcohol added at the finish of fermentation, this technique gives the sake a little lift in terms of body and aromatics. They can be both more expressive, yet also bear a cleaner and less bitter finish that Junmai styles. This clean finish makes Blue Hue and other Honjozo styles really nice and sessionable.
On the palate, there's notes of fresh rainwater, dried rice stalks, a hint of melon, and also a nice balancing note of umami that gives structure and body.
This is a knockout sushi/sashimi pairing sake. Also good with salty cheeses and focaccia bread.
