What is Japanese food without sesame seeds? When I open a package of these, my mouth waters. When I start grinding them up, my tummy rumbles. Meticulously sourced, sorted, and roasted, these organic sesame seeds are so aromatic and flavorful. The devil's in the details, and these tiny accents can really add to a dish and make a big difference. White sesame seeds are traditionally used in cooking or to make pastes, while gold and black ones are best suited for garnishes. To keep them super aromatic, I store mine in the fridge or freezer.
Etsuji Wada, 4th generation owner, is considered the best sesame roaster in Japan, personally roasting Wadaman sesame for over 45 years. Sesame roasting is a lot like coffee roasting, and attention to detail goes a long way. Wadaman sesame seeds go through a meticulous six-step cleaning process and a three-step roasting process at three different temperatures to extract the maximum amount of flavor.
