Locally-made yakisoba sauce made by UMI Organic in collaboration with their good friend, Naomi-san. It's rich and quite fruit-forward, owing to the tamarind paste.
Here are some words from UMI's website:
'This is a deep and inky sauce that is a little sweet (as yakisoba sauce should be), but nothing like most yakisoba sauces, with a strong tamarind note that keeps it from being cloying. We developed the recipe at the request of our dear friend Naomi who wanted a sauce available for Portland Public Schools that was less sweet and richer than what they had available to serve with our yakisoba noodles. We took the first stab and she finalized the recipe. We took inspiration from the history of yakisoba sauce, which bring together the spirit of chow mein, British Worcestershire, and fruits. Ours includes organic tamari and Worcestershire and, in addition to the tamarind, apple sauce.'
