The family who makes Izumo Fuji (Just dad, mom, and son; small team!) does nearly everything by hand, in traditional ways, holding on to using the brewery's old equipment like its wooden tanks and presses. They brew their sake with top quality Yamada Nishiki rice that's grown in-town by farmer friends of theirs. The quality and care are evident in their sake. 

Izumo Fuji drinks smooth and dry, with a lively fresh palate that expresses notes of toasted rice and tropical fruit in equal measure. Tasting notes of salted grilled pineapple breezy alongside oceanic minerality make this sake one of my absolute favorites. Izumo Fuji's Ancient Shrine punches well above its weight for sake of this price. 

Ancient Shrine pairs well with big spicy flavors like Mexican and Indian cuisines, just as much as it goes well with subtler things like lightly seasoned grilled vegetables. Drink it chilled, room temp, or warm.
