Dried shiitake mushrooms are a staple in Japanese cooking. I love them for making vegan dashi (shiitake+konbu+water). for reconstituting and cooking in rice, for sauteeing with veggies, and for pickling.
If you use the mushrooms to make dashi, don't discard the mushrooms! Slice them up, sautee them, or pickle them! These are Chabana Nikuatsu style so they are thicker, plumper mushrooms.
PS. You can set the dried shiitake in the sun for an hour before cooking them to enrich them with Vitamin D!
