Kuroushi's "Black Bull" is rich and ricey, with a soft earthiness and a touch of leather. It's a full bodied, well balanced, dry sake that is made to show of the best qualities of the Omachi rice varietal that it's made from.
Omachi is important rice. It is the oldest pure strain of sake rice, discovered in 1859. Some think that it only loses out on being considered the "best" sake rice, (due the nuanced, layered, mildly fragrant, earthy sakes that can be made from it) because it is difficult to grow and hard to polish. Brewers who do take on its challenges are rewarded with rich, layered complexity, nuance, and a soft yet sturdy backbone upon which to inlay the fruity and herbaceous characteristics of sake that come out during fermentation.
Black Bull's rich and well balanced flavors make it suitable for pairing with nearly anything. It's one of the most versatile pairing sakes we have encountered. Drink it warm, room temp, or chilled.
The Omachi rice used in Black Bull is polished to 50% before brewing. The alcohol content is 16%.
