High quality buckwheat soba noodles made in Yamagata, Japan. These noodles are rich in buckwheat flavor as they're a blend of three strains of buckwheat: Kitawase for its dark color and rich aroma, Mogamiwase for its sweetness and rich flavor, and Dewakaori, for its light color and sweetness. Additionally, they add some grated mountain yam for texture and the minimum amount of salt possible in order to preserve the delicate aroma of buckwheat.
