Panko are breadcrumbs made with shokupan with the crusts removed (shokupan = milk bread from Hokkaido). It's a bigger flake than typical western breadcrumbs and imparts a really crispy, delicate texture to fried dishes. You can't make Japanese katsu, korokke, or ebi fry without panko, but you can certainly sub panko for your western recipes to increase the crunchy texture of your dishes.
This is a mutenka Panko, ie Panko without artificial additives or preservatives and this one is made with unbleached wheat flour.
