This is my go-to sesame oil. It's mild and not overly-roasted, but so rich in sesame aromatics. And the body is so silky! I usually use mine sparingly since the flavor and texture really cut through all other oils and flavors, but if I'm making something special, I'll use it in the pan as cooking oil. I love adding a splash to sauteed veggies or meats, and also use it in marinades, sauces, and dressings.
Etsuji Wada, 4th generation owner, is considered the best sesame roaster in Japan, personally roasting Wadaman sesame seeds for over 45 years. Sesame roasting is a lot like coffee roasting, and attention to detail goes a long way. Wadaman sesame seeds go through meticulous six-step cleaning process, and three-step roasting process, at three different temperatures, to extract the maximum amount of flavor. Wadaman sesame oils are pressed in small batches, and of all of Wadaman's products the sesame oils are where the exceptional attention to quality in selection and roasting shines through.
