Yamada Shoten is a Mom 'n' Pop brewery. They are a small operation that only brews sake in a very traditional and handcrafted style. They only use local rice, which they mill themselves (unheard of for small breweries!) and brew at ambient temperatures, without heating or cooling controls in place. The Japanese on the main label reads "mukashi no manma" which roughly means "the way it's always been."
Everlasting Roots is nutty and smoky on the nose, with aromatic support coming through in the way of tangerine, orange blossom, cocoa, and clove. In the mouth, it is light and dry with refreshing melon and tangerine notes, and a savory finish.
This sake is made from Hida Homare rice which is milled by the brewers themselves to 55%. This would qualify it for being labeled Ginjo (High-polish), although they choose not to label it as such.
Some parings that we think would really make this sing: miso marinated salmon, ramen, and rabbit. Also, aged Gouda. Everlasting roots works great across a range of temperatures, from slightly chilled, to room temperature, and warmed.
Take note, the bottle size is almost 1 liter! It's a great value. And don't fret on drinking it before the sake "expires" or "turns". Like all sake, this will hold up for at least a month, if not longer.
