This is the most delicious hiyashi chuuka sauce ever. This is a miso based hiyashi chuuka sauce and it strikes the perfect balance between savory, sweet, and tangy. It's also rich and creamy. This is stored frozen so make sure to thaw it before you use it. Serves about 3 - 4. Make sure to grab some while supplies last cuz they're only running it seasonally.

Hiyashi Chuuka is based on Chinese sesame noodle salad and it's so easy to make, especially if someone else is making the sauce ;) Just boil ramen noodles. Rinse in cool water, drain, and let chill in the fridge for at least 10 minutes. Julienne any variety of veggies; I especially love cucumbers, tomato, green onion. You can make a simple japanese egg pancake and julienne it too, and feel free to add any julienned protein like fried tofu, deli meat, thin-sliced steak, or pulled rotisserie chicken. To plate up the salad, first toss the chilled noodles in this dressing, and then top with the julienned toppings. I usually arrange the toppings in sections, radially, like pie pieces.

The sauce has toasted sesame seeds, apple cider vinegar and Jorinji Miso of course! The sweetness, sourness and umami really match with the ramen noodles and seasonal ingredients.

We developed this sauce recipe in 2017 to help promote Japanese summer meals using miso. After launching we’ve been enhancing the recipe a little bit at a time. And we're finally starting to sell the sauce so more people can become familiar with the Japanese custom of enjoying Hiyashi Chuka during the summer!
